Vegas’ Top Chefs Are Expanding Fine Dining Away From The Strip
Where: Las Vegas has great donuts, but you have to look a little for them. PinkBox has been around for the past five years and with two locations on the west side of town, it’s always a great Sunday morning destination. Donut Bar, a recent transplant to downtown San Diego with all kinds of creative concoctions and killer iced coffee—the perfect destination for a morning sugar rush after a night at the bar. Donut Mania is another place for wild and crazy flavors. But if you want a classic, Donut Hut is your go-to: it’s been in business for nearly 30 years.
Where: For nearly 20 years, I have lived in the wonderful community of Summerlin, once known as the fastest growing community in the country. It is located at the far end of the Las Vegas Valley, 20 minutes west of the Strip, at the base of Spring Mountain, home to the picturesque Red Rock Scenic Loop. Summerlin boasts some of the best restaurants in town. Salute, serving Italian cuisine, is located at Red Rock Resort. On a nice evening, the patio is a must. Be sure to order the meatballs and arincini for the antipasti, tableside signature pasta, and the best chicken parmesan (large enough to split). The perfect cheat meal. Honey Salt Owned by restaurateurs Elizabeth Blau and chef Kim Canteenwalla, this farm-to-table inspired restaurant is a favorite lunch spot for locals. I always start with green goodness juice, then free range chicken with Healthy Grain Power…delicious! If desserts are your thing, treat yourself to Brookie, one of the most decadent desserts ever. Vintner Grill was recently voted “Best Restaurant for a Festival.” Owned by local brothers Sean and Michael Corrigan, this local hotspot is a lively American bistro with casual elegance and modern decor. It has a great weekend vibe and a great wine selection. It’s a neighborhood treasure where everyone knows each other.

Where: Elizabeth Blau: Another Uncle is my favorite for premium raw seafood and great cocktails. It’s the off-the-strip neighborhood spot that all the city’s chefs love. Chef Dan Cromer offers a creative menu of amazing oysters, sashimi, crudo, ceviche and other delectable dishes.

Where: Amy Rossetti: I love a good Sunday brunch, and Andiron Steak & Sea in downtown Summerlin speaks to all audiences: a storied list of bottomless bubbly, a build-your-own Bloody Mary bar, a menu that offers donuts to boot, amazing avocado toast and a variety of A DJ who amps up the chic atmosphere with beats. What’s great about this place is that it’s an experience you’d find on the strip, but invites visitors and locals alike to its secluded off-strip location that’s truly unique.

Shannon McBeath: Andiron Steak & Sea is where classic meets contemporary. My favorite for Sunday breakfast. Their chilaquiles and donut plate will cure any hangover (and of course the Bloody Mary’s and bottomless mimosas help too!).
Where: Just when I thought I couldn’t love Restaurant Guy Savoyat Caesars Palace more, the Savoy recently installed the Caviar Room inside its lounge, so you can experience the famous restaurant without the multi-course commitment. Look for the iconic colors of the caviar dish, as well as oysters and Siberian berry caviar by the ounce, Belvedere Martinis and Krug. You can visit during restaurant hours: 5:30-9:30 p.m.
Where: I like to try a variety of restaurants, but one establishment in particular has been back since its opening day. Considered one of the best Thai restaurants in the United States, Lotus at Siam is truly a Las Vegas treasure, and it’s found in an unlikely place: an offline strip mall. This place is special to me, I spent birthdays here with my closest friends and enjoyed some of my favorite dishes including the must-try Nam Kao Tod, Crispy Duck Panang and Seasonal Soft Shell Crab Drunken Noodles. The wait can be quite long considering the restaurant is home to a James Beard Foundation award-winning chef, so I recommend relaxing at the bar while enjoying some great appetizers.
Where: One of my favorite local restaurants is Ferraro’s, just off Las Vegas Boulevard. Ferraro has spent the last 30 years perfecting Italian pasta and osso bucco. There’s live entertainment to set the tone as you head into the spacious bar area (check out their happy hour specials). Or have a romantic, intimate dinner in the main dining room.

Where: Chada Thai is where the cool kids go and a fantastic little Asian fusion spot close to Chinatown. It has an excellent wine list (yay) and is easily gluten-free (yay), the menu is varied, the cuisine is delicious and delicious, and the service is consistently excellent. It’s a small environment: reservations for no fuss. Another tip: Go with friends. You’ll want to try a lot of their menu.

Order the DIY Spring Roll Platter: You can dip your own rice paper wrappers, then fill them with fresh ingredients and wrap them up. It makes for a fun day, and even though my spring rolls are always ugly, they are always delicious.
Where: When I eat on the strip, I love Lakeside, because its simply prepared Hanahi family-caught fish is often fresher than the fish you get at restaurants on Maui. I have a soft spot for this transportation restaurant as I went fishing with Chef David Walzog for a story and experienced the magic and labor of love that goes into this restaurant.

Where: My favorite secret dining spot is by José Andrés, tucked inside Jaleo at the Cosmopolitan of Las Vegas. It doesn’t matter who you are: you have to make a reservation three months in advance, and you will receive a “golden ticket” as your confirmation – if you are lucky enough to get in, the room seats about 10 people and is included. A large group of chefs prepare food. And what a meal! It is the ultimate culinary masterpiece and will leave you in awe. The menu changes seasonally and can include anything from a truffle tree to cotton candy foie gras lollipops, paired with some of the best wines you’ll ever taste. The presentation is equally excellent.
What: If your dog is ready for its T-R-E-A-T, head to Three Dog Bakery for home-baked biscuits. Ready for your own vacation? You and your dog are welcome at the two lazy dog locations, where you can grab a snack on the patio and your friend can get their own chicken and rice bowl.
What: A short Uber ride from the strip is a dimly lit cocktail lounge and restaurant called Herbs and Rye. It has a speakeasy vibe that owner Nectali Mendoza and his staff have honed over the years. Belly up to the bar, and you’re guaranteed a historically accurate classic cocktail. The drink program is one of the best in town and the drinks are worth full price – but why pay for them when there are two happy hours? It’s a local hangout and a favorite for hospitality workers.
