It’s the end of the season. So they only have the field. I usually try to buy select or bigger. Bought 15 lbs field running and unfortunately the loss of death this time is greater and the crawfish was really small. I will still order mine from them again as all the other times it was great. Maybe the quality hasn’t been there since the end of the season. Customer service was great though! They are super responsive and helpful.

Every order has no problem? says Josh Smith, co-owner of Lazy J Crawfish in New Braunfels. “Try a dollar fifty high.” Lazy J, which Smith runs with his brother Adam, provides both restaurants and the public with live crawfish, and will soon serve boiled crawfish in a new food truck. The Smiths now price a sack of squirming, bargain crustaceans at $1.50 higher per pound than last year. A full, thirty-ish pound sack that feeds about ten people each (depending on your family’s appetite for mudbugs) goes for $3.75 per pound, and a half sack is slightly more expensive at $4 per pound.
Similarly, Quality Seafood Market in Austin has raised the price for live crawfish, to $4.50 per pound, owner Carol Huntsberger says is “the highest, hands down, I have ever charged for crawfish.” Last year, Quality Seafood charged an average of $3.79, and although Huntsberger said prices have been dropping throughout the season, he still estimates the 2021 average price will be about 20 to 25 cents higher than normal. Post east, things are not better: Houston-area prices for crawfish live on The Crawfish App, which tracks the price of crawfish, ranging from $3.77 per pound at H-E-B to as high as $5 per pound at some independent markets. So what happened?
Full Sacks Of Live Crawfish
First, a primer on how the season typically progresses. In a normal year, crawfish season begins sometime around the Super Bowl in February, and the smallest, softest-shelled, mudbugs have the highest price on the market. Prices are at their highest around Easter, when large holiday gatherings increase demand. All this time, crawfish grow bigger, and when they get a shell thick enough to protect them during transport, the price starts to drop. Usually, Huntsberger said, peak season is the third or fourth weekend in April, when crawfish are big and tasty, but not difficult to peel. From there, the season lasts as long as supplies last, often as late as the Fourth of July. In recent years, however, the popularity of boil crawfish has increased, short season. Last year, the supply of crawfish at Quality Seafood was gone by Memorial Day.
This year, the price is noticeably higher. Like everything, crawfish prices have been affected by the pandemic. Of the many celebrations to be canceled in 2020, the crawfish boil is the first. The world was shut down during the crawfish season, and little information was available at the time about how the virus was spreading, and even these outdoor social gatherings were suddenly out of a newspaper-lined table. But this year, starved of opportunities to socialize and get spring fever after a harsh winter, Texans are looking for ways to get together outside. Boiled crawfish are high on that list. “The gathering can be smaller — instead of twenty to thirty people, they can do ten to fifteen,” Huntsberger said. Judging by his orders so far this year, he said it was “quite evident” that people were ready to boil again this year. That increased demand, of course, drives up the price.
The Easter Bunny came early this year, bringing even higher crawfish prices in his basket: the holiday falls on Sunday, April 4, this year. (In 2019, Easter falls on April 21.) The Texas market typically sees a spike in crawfish prices just before the holiday, thanks to large orders for the celebration, and, yes, Holy Week prices at Quality Seafood rose $.25 to $4.75 per pound accordingly . But it’s more than that: with Easter happening early in the season, the crawfish that are now available are smaller and have a softer shell than those who usually go from Mass to the usual boil. When these daintier crawfish are transported, “they can’t hold thirty pounds on top of them. They literally die, that’s what happens,” Huntsberger said. That built-up loss, which he puts between 30 and 40 percent this year, increases more prices during the early Easter rush.
Contributing to the spike in prices is February’s deep freeze. Russell Smith of Louisiana Wild, a crawfish supplier serving markets and restaurants in Central Texas including Quality Seafood, does not expect the freeze to claim the lives of many crawfish. Most of the crawfish sold and served in Texas comes from Louisiana, and while our neighbors in the east are also affected by the historic winter weather, Lazy J’s Josh Smith thinks hurricanes are likely more destructive to the crawfish population than the freeze. Five record-breaking hurricanes made landfall in Louisiana in 2020, causing high tides that disrupted crawfish ponds and introduced predators like crabs. This is also reflected in high prices.
Earl’s Live Crawfish
The freeze could actually benefit the 2021 crawfish season, Huntsberger and Smith agree. With Texas shut down for more than a week in February, demand briefly dropped, allowing crawfish buried in the mud to grow larger and rely on their shells, making them less vulnerable to a fatal squish during the trip. According to Smith, the freeze will only reduce the drop in late season prices, while leaving the crawfish alone: ”Will [the freeze] hurt the price? Yeah. But will it hurt the catch on the quantity of crawfish? No.” And Huntsberger says the lull in demand could even extend the season longer.
Although mudbugs may be more expensive than in past years, there is hope for the 2021 season. Huntsberger anticipates prices will drop as supplies increase, potentially as soon as next week. As Easter demand subsides, prices may drop as much as $.50 to $.75 per pound. Fill your propane tank and your giant boiling pot from the top shelf in the garage, Texas. Peak crawfish season is underway. And whether you like them boiled Cajun or Vietnamese style, Smith says good things will come to those who wait: “Maybe two or three weeks from now, the crawfish will be phenomenal.”
