Jumbo Size – This means 2 for a good entree or one for an appetizer on crab grading charts. We buy our crabs from a company called Southern Connection in Crisfield, Maryland and have been for over 20 years. They harvest at night and deliver to us by 4am – I’m not sure fresh crabs are possible. We’ve decided the only way to do overnight crabs and not make you feel bad is to dress them – that’s a good word for clean em! So that’s what we do. The second we get them, and we make sure they’re jumping, then we clean them properly, and wrap and pack them. It just makes sense.

Again we want 5 ingredients or less so here we go 1. Crab, 2. Flour of your choice, 3. Egg, 4. panko (we carry), 5. S&P, 6. Herbs (herbs don’t count)

Cajun Boil Maryland Style

Saute in 50/50 olive oil and butter – – I love this combo, let me know if you do too!

Standard bread – flour, eggs, panko in that order – lol no measurements because we are all professionals – right? Season the flour and eggs with your salt, pepper, and herbs for easy distribution to the crabs

Add oil and butter to your pan, we’re not deep frying fat so heat until the back of a wooden spoon bubbles, about 1/8 inch.

Cook 3/4 minutes on each side until golden and finish in a 350-degree oven for about 8/10 minutes – yum

Serve with one of our sauces – I like dill mustard or yogurt depending on my mood with a splash of Tabasco!
