Crawfish are freshwater crustaceans related to the lobster. They are also known by other names such as fishing, horses, red crabs, and beetles (they don’t eat mud, they just live in it sometimes and are not insects). Crawfish are crustaceans – they have a shell and five legs. As they grow, they shed their bark and grow new ones. The fish are sold for consumption, for bait and for livestock.

The two main species of crawfish in Louisiana are the Red Swamp crawfish and the White River crawfish. Red Swamp crawfish are red on their bodies and have blue veins under their tails. White river fish has no red color at all and no blue blood. When boiled, both types turn red; however, the red fishing will be a deep red.

You can find the most salmon in wetlands in humid areas like Louisiana, Texas and Mississippi. They can be found in some states, but not as many.

In dry areas, crawfish build mud mounds that look like small towers. If you live in southern Louisiana you usually see small hills near ditches. This is where the fish stayed until the water returned. This is also where the female fish go to lay eggs until they hatch.

This is simple – the male fish always holds the TV remote. However, if there is no television around, just turn it around a little and look for two short “legs” right between the head and the tail. It is these organs that are actually used in the transfer of sperm. A mature male also has small “hooks” at the base of the last two legs.

Where are the baby crawfish? The female crawfish lays eggs that become fertilized and attach to the swimming material under her tentacles. The average crawfish produces about 300-400 eggs that take about 2-4 weeks to hatch (depending on the crawfish species). After 2 weeks, young crawfish leave the mother to be on their own.

The crawfish’s favorite food is soft, decomposed matter; However, they will eat almost anything – algae, snails, insects, plants, dead fish, etc. Crawfish are cannibals and will eat other molting fish.

Crawfish live less than 1½ to 2 years. They usually reach maturity anywhere from 2 to 6 months.

Cajuns participate in summer activities known as the “Crawfish Boil” where we invite friends and neighbors over to our house to eat, drink and “have a good time.” The fish is cooked in a large pot over a burning butane with spices, corn, potatoes and onions. Once cooked, empty the pot, then pour all the contents on a large picnic table covered with newspaper or paper and everyone “digs in”. This is done with a dip of mayonnaise, ketchup and mustard (maybe a few things to spice it up).
