And other fantastic Louisiana products for US residents. After all, crayfish have been called a delicacy here since the early 20th century. Crayfish were once considered food for the poor because they were plentiful and easy to catch. They soon became more and more popular, and people began to develop “cancerous boils.” Crayfish cooking is very popular in South Louisiana – people call friends and family together to boil and serve crayfish, usually in the spring and early summer when crayfish are more abundant and cheaper. When boiling crayfish, you can usually order about 1-2 pounds. per person (3-4 pounds for a heavier crayfish eater) if you have other items to serve like sausages, potatoes, corn, etc. Also, boiled goes great with cold beer. Boiled crayfish are a delicious excuse to invite a few relatives and friends over. And we at Kyle LeBlanc Crawfish Farms would like to spread this Cajun tradition across the country. Crayfish leftovers are great for making crayfish dishes like tuffy, biscuit, stew, fried, etc. (see our recipes). We also include crayfish recipes with your order. Whatever crayfish you eat within 2-3 days of the party, you can peel those leftover crayfish and store them in the freezer until ready to cook. How To Throw A Crawfish Boil

Crayfish are freshwater crustaceans closely related to lobsters. They are also known by other names such as crayfish, crayfish, red claw, and mud bugs (they don’t eat dirt, they just live in it sometimes, and they’re not bugs). Crayfish are crustaceans – they have a shell and five pairs of legs. As they grow, they shed their shells and grow new ones. Crayfish are sold for food, as bait and for pets.

The two main types of crayfish in Louisiana are the Red Swamp crayfish and the White River crayfish. Red swamp crayfish have red pigment in the body and a blue blood vessel under the tail. White crayfish have no red pigment at all and no blue blood vessels. When cooked, both species turn red; however, Red Swamp crayfish will be darker red.

You can find crayfish mostly in lower wetlands in humid areas such as Louisiana, Texas, and Mississippi. They can be found in other states, but not as abundant.

In places where the water dries up, crayfish build mud mounds that look like small towers. If you live in southern Louisiana, you usually see small mounds next to ditches. Here the crayfish remain until the water returns. Female crayfish lay their eggs here until they hatch.

Crawfish Boil Basics

Crayfish have gill chambers that absorb oxygen from the air. If crayfish are in a humid atmosphere, they can live out of water for about 6-7 months, as long as their gill chambers remain moist.

It’s simple – the male crayfish always holds the TV remote control. However, if there are no TVs nearby, simply turn the little creature over and look for two short, thick “legs” right between the head and tail. These are indeed organs used to transfer sperm. The mature male also has small “hooks” at the base of the last two pairs of legs.

Where are the little crabs? The female crayfish lays eggs, which are fertilized and attached to the trunks under the tail. On average, crayfish produce about 300-400 eggs, which hatch in 2-4 weeks (depending on the type of crayfish). After 2 weeks, young crayfish leave their mother to be alone with themselves.

Crayfish’s favorite food is soft, decaying plant matter; however, they will eat just about anything – algae, snails, insects, plants, dead fish, etc. Crayfish are cannibals and will even eat other crayfish that molt.

The new shell of crayfish hardens in about 1-2 days. At this time, they are very vulnerable to predators, including other crayfish. They usually molt about 10-11 times until they are mature and stop growing.

Cancers do not live much longer than 1.5 to 2 years. They usually reach maturity in 2 to 6 months.

Cajuns participate in a spring event known as “Crayfish Boil” when we invite friends and neighbors to our home to eat, drink and “have a good time.” Crayfish are boiled in a large pot on a butane burner with spices, corn, potatoes and onions. Once cooked, the pot is drained and the entire contents are poured onto a large picnic table covered with newspaper or paper and everyone “digs”. This is served with a sauce of mayonnaise, ketchup and mustard (maybe a few other ingredients to spice it up).
